10 Steps to the Perfect Pork Chop
Clancy’s may be known for having the town’s best beef, but did you know we also specialize in pork? Here’s our 10-steps to making your own homemade rub and grilling your pork chop to perfection:
- Visit your nearest Clancy’s Meat Co. location and let us help you select the perfect pork chop. Look for a lean cut with just enough fat around the edges to enhance flavour.
- Once home, place on a plate or pan.
- On a separate plate, sprinkle your favourite seasoning salt, coating the center of the plate.
- Place pork chop on the plate, making sure seasoning is distributed evenly front to back. For added flavour, season sides.
- Using your fingers, pat the salt into the pork chop until the seasoning is fully set in. Then lightly sprinkle Oregano on each side, and firmly pat in until well bonded to the meat.
- Preheat your gas or coal grill to 350 degrees F for about 15 minutes to burn off any pre-existing food residue. Then designate the 'Hot' and 'Warm' spots on your grill. With gas, you will do this by turning half of your grill totally off. If you are using Coal, you will place your coals to one side of the grill.
- Place the pork chop on the grill in the 'Warm' spot, NOT over direct flame or heat. After about 8 minutes, flip the pork chop over, and cook for another 8 minutes.
- To test for complete cook-through, simply make a small cut in the center of the pork chop, and allow the juices to seep out. If the juice runs clear, the pork chop is fully cooked.
- Throw your pork chop over the 'Hot' spot on your grill, and let each side blaze for about 1-2 minutes or until the outside becomes slightly darker and begin to sizzle.
- Finally, move your pork chop onto a plate and cover with tin foil for 5-10 minutes. This will allow the meat to set, so the meat will maintain its juices.
